I cook a lot, as in, I cook almost everything that I eat. I’ve always enjoyed cooking, but I started cooking constantly in the spring of 2016, when I went through a major crises. I weighed over 425 pounds and was suffering from crippling anxiety. I decided to get healthy in every way I could, and changing my diet was one of the most immediately important parts of that, not only because I dramatically decreased my caloric intake, but I also resolved some serious cognitive dissonance, first by going vegetarian and then vegan. Along the way, I’ve learned to make all kinds of interesting foods, from staples such as various nut milks and tofu to a variety of one-pot meals and specialty dishes. As I come up with new recipes (or improve on old ones), I’ll post them here.
